Expressive Language Objectives and UDL

Pretend there's a culminating social studies project and the 3rd grade students have to share their work with the class for instance. They can share their work in a number of ways.

As a teacher I'm trying to develop my student's language (and get them to demonstrate understanding in some way). So if UDL principles encourage us to accept different types of work (like drawing their understanding, filling in a graphic organizer of their understandings, making a power point) do these alternative assignments help develop the students expressive language? I'm sure this is a question of the ultimate "objective" of the assignment but aren't we trying to develop our students language (at least partially) in all objectives?
